This is so basic that it almost seems like cheating to post it as a recipe. I love baked goods, especially if they have chocolate, but very often the end of the meal is simple and uncomplicated - like this dish. In fact, in some places, the dessert will be even simpler, consisting simply of fresh fruit. I recently found myself preparing a dinner for my husband and one guest. I slept later than I'd intended, and I had other work to do besides cooking, and I had to excavate enough space in the kitchen for us to eat. I didn't have the time to make something fancy, and frankly I didn't have the inclination. When I went to the store, I saw a container of strawberries in the produce section. Even though I know it's early for strawberries, it's been a long winter and they just appealed to me somehow.
Yogurt with Strawberries and Honey (serves 3, approx. $2.70/serving)
1/2 lb strawberries, cleaned and quartered
2 cups fat-free Greek yogurt
3 tablespoons wildflower honey (more or less)
Equipment:
- No special equipment needed.
- Lay out three dessert serving vessels.
- Scoop 2/3 cup of plain Greek yogurt into each vessel.
- Scatter the strawberries evenly atop the yogurt.
- Drizzle the honey over the yogurt and strawberries.
- Serve.
It really is that simple. You could dress it up a little by rimming the dessert vessel with flavored sugar, with finely chopped pistachios, or even with melted dark chocolate. I used fat-free yogurt out of habit, but if you want a richer taste you'll be just fine going with a two-percent or full-fat version. I used Greek yogurt because it's thicker and has a more luxurious feel in the mouth. You can get by if you take regular American yogurt and strain it for a while through coffee filters or even kitchen towels.

This is my idea of a good dessert. Fruity, creamy and not too sweet. I can't wait for strawberry season!
I do that with plain yogurt, strain it so it's not so watery. Great ideas!

Thanks! Like I said, it's too early for really fresh, local strawberries, but with the winter we've had I'm willing to make do :) In a couple of months, when we can get real berries or better yet pick them from the garden, this will be even better.
I found the straining-the-yogurt trick in a fundraising cookbook from a Greek church. I used to do it a lot before I was able to easily find Greek-style yogurt. It takes a while, but it's effective!

Hi, and thanks for commenting on my recipe for Halloumi cheese. The most simple recipes are the best I think. We eat yoghurt, honey and any fruit all the time in Greece. You can take your recipe a level higher by whipping some fresh cream and mix it with the strained yoghurt and add fresh fruit or canned. It's the best dessert.
