I can't stand to let a single meal go by without vegetables, and a decent quantity of vegetables at that. That said, sometimes I worry that I'm getting into a vegetable rut. I can develop this kind of tunnel vision, where I just fix one or two vegetables as side dishes over and over and over. This blog is helping me to overcome that a bit, since making the same thing every day doesn't help me develop new content, but I still recognize that tendency in myself. I found some broccolini at the supermarket recently, remembered having seen this recipe somewhere and decided that I would make it.
I did make a few changes to the recipe, because I kind of have to. I used duck stock that I made with the carcass from my pomegranate duck recipe in place of the chicken stock or water called for in the original. I used hot pepper sesame oil in place of the vegetable oil, because I really like hot pepper sesame oil. That's really it. It was an incredibly easy recipe to make, and the only hard part was discarding a large part of the stock at the end of the recipe. That seemed kind of wasteful to me, so the next time I make it I'll probably use water instead.
Broccolini in Oyster Sauce (Serves 4; approx. $0.85/serving)
1 bunch broccolini
2 cups stock or water
1 teaspoon salt
1 tablespoon hot pepper sesame oil
3 1/2 tablespoons oyster-flavored sauce
Equipment:
- Wok
- Cut off any hard stems on the broccolini
- Bring the stock or water to a boil over high heat.
- Add the salt, oil and broccolini.
- Boil uncovered for about 2 1/2 minutes.
- Remove the broccolini and arrange on the serving platter.
- Pour off most of the cooking liquid, reserving 1 1/2 tablespoons.
- Reheat the wok over medium heat and add the reserved cooking liquid.
- Add the oyster sauce and bring almost to a boil.
- Pour over the broccolini and serve.

Those kind of dishes are simple yet absolutely delicious. I've had my fair share of oyster sauce-based vegetables and never get sick of it.
