I know I've posted about grilled asparagus before. It's so easy, and so versatile, that it lends itself to a multitude of applications that can go with almost everything. I made this for Easter dinner - we were already using our Big Green Egg for the lamb, so adding things on at the end while the lamb was resting was fantastically easy. This was so easy that I feel silly posting it. If you don't have - or can't get to - a barbeque, use the broiler in your oven.
Easy Grilled Asparagus (Serves 4; approx. $1.45/serving)
1 bunch asparagus
1 tablespoon olive oil
Kosher salt and pepper to taste
2 tablespoons lemon peel
Equipment:
- Grill, barbeque or broiler
- Wide, shallow dish. I used a disposable (but reusable) aluminum roaster pan.
- Preheat your grill. We used a relatively low heat.
- Prepare your asparagus by washing and trimming the woody ends.
- Place the spears in a single layer in your wide dish.
- Drizzle with the olive oil.
- Sprinkle with the salt, pepper and lemon peel.
- Roll the spears back and forth or shake the dish gently to distribute the seasoning and oil.
- Grill for about 5 - 10 minutes.
- Serve.
