Here we are again with yet another way to get your greens. I know I've made this dish before, but apparently I haven't posted it. It's an incredibly simple recipe, and very healthy for you to boot. The greens provide fiber. The strawberries offer fiber and all sorts of anti-oxidants. The goat cheese provides calcium and some other kinds of good stuff - I'm not a nutritionist. The "dressing" consists entirely of vinegar, reducing the amount of fat. Finally, and most importantly, it tastes good. If eating healthy becomes an ordeal, you're much less likely to stick with it. Even your healthy dishes should have a good flavor to them. Just my two cents...
Green Salad with Strawberries and Goat Cheese (serves 4; approx. $1.18/serving)
3 ounces salad greens (approximate)
1 pint strawberries, stemmed and sliced
1 ounce goat cheese, crumbled
3 sprigs fresh oregano, leaves only
1 tablespoon balsamic vinegar
Equipment:
- No special equipment is required for this recipe.
- Combine the ingredients in a salad bowl.
- Drizzle the vinegar over the salad.
- Serve.

It's a great idea to combine strawberries and goat cheese with greens. Sounds like a perfect salad!
