This recipe is easy. It is so easy that it qualifies as "wicked easy." And as a transplant to the New England area, I do not throw the "wicked" qualifier around lightly. I had more mushrooms than I needed one Sunday - our Sunday open house was rained out, and I had more ingredients on hand than I knew what to do with. This dish sprang to mind immediately. It has five ingredients if you count a pinch of salt. It cooks up quickly and fills the room with the scent of mushrooms and garlic.
Mushrooms with Garlic (serves 2; approx. $1.47/serving)
10 ounces cremini mushrooms, wiped and sliced
6 garlic cloves, thinly sliced
1 tablespoon olive oil
1 pinch Aleppo pepper (substitute cayenne if you haven't any)
1 pinch kosher salt or to taste
Equipment:
- Saute pan
- Heat the oil in the saute pan over medium heat.
- Add the garlic. Saute until the slices are fragrant. They might just begin to turn brown, but be very careful not to burn them. That tastes bad.
- Add the mushrooms and reduce heat to medium low. Cook until the mushrooms are tender and have begun to yield some of their juices.
- Add the salt and the aleppo pepper. Cook another few seconds, to let the flavors marry, and then serve.

Garlic mushroom, this is how I usually make my mushrooms, with lots of garlic :-)
