I made these as the dessert for a recent Sunday dinner. They were good. They were a little more dense than I was really expecting, but that doesn't change the fact that they were good and that most people had seconds. They're not fancy. They could have been fancier had I used the glaze suggested in the book, but I decided that they didn't need to be all that fancy. My guests were just as happy with the powdered sugar topping, which was suggested by the book, as they would have been with a messy chocolate glaze.
I made these pretty much as written, with the exception of the fact that I used fat-free Greek yogurt instead of sour cream. I tend to do that as much as possible, because I've got lots of uses for Greek yogurt and very, very few uses for sour cream.
Chocolate Chip Cupcakes (makes 18; approx. $0.41/ea)
2 cups flour
2 cups light brown sugar, packed
1 teaspoon baking soda
1/2 cup butter, cut into pieces
1 egg
1 teaspoon vanilla
1 cup fat-free Greek yogurt
1/4 cup whole milk
12 ounces dark chocolate chunks
Powdered sugar, for dusting
Equipment:
- Stand mixer
- 2 cupcake tins, or however you get to 18 cupcakes
- 18 cupcake liners
- Preheat the oven to 325.
- Line the cupcake tins with the liners.
- In the bowl of your stand mixer, combine the flour, sugar and baking soda to blend.
- Add the butter and mix until the butter pieces are "the size of small peas," which the book says should be about 2 minutes.
- Scrape down the bottom and sides of the bowl.
- Add the egg and vanilla. Mix well.
- Add in the yogurt and milk. Mix until the batter looks evenly moistened; lumps are okay.
- Mix in the chocolate chips.
- Fill the liners to about 1/3" from the top of the liner, with the batter.
- Bake until a tester in the center of a large cupcake comes out clean, about 25 minutes.
- Cool 10 minutes on wire racks in the pans, then turn out of the pans to cool completely.
- Dust with powdered sugar and serve.
