Quince is one of my favorite fruits and we're so lucky here as we can find it at any market downtown. Quince jam is a kind of dessert for me rather than a breakfast dish. I can eat it after each meal as a dessert. Cardamom is a great idea, I bet it gives a distinctive flavor to this amazing jam.
And guess what? I know a way to give this jam the color you want. Do not waste its seeds, throw them just into the pot before the jam starts to boil and boil them together. The seeds of quince are the great source for a reddish color. You can take them out while pouring the jam into jars.
