Can you find fresh cranberries where you are? I haven't really given a whole lot of thought to the subject. It's fall, I live in New England, of course I can find fresh cranberries. I have no idea, though, if cranberries even grow in other parts of the country or if they get sold fresh outside my local area. I'm not what you'd call a huge cranberry fan. I don't like them when they've been cooked. I could go for a very long time indeed without ever seeing cranberry sauce on a holiday table again. I have little use for anything made with dried cranberries, and don't much care for things like cranberry muffins et cetera. Fresh, raw cranberries are a different story. I like them in salads.
I made this on a recent weeknight when I was just too tired for a more elaborate vegetable dish. I liked it well enough - the cranberries I'd found weren't the highest quality, which was kind of disappointing to me. My husband really, really loved this dish. I mean, he REALL'Y loved it. It's a very simple side salad that really works well on a weeknight.
Light Cranberry Salad (serves 4; approx. $0.92/serving)
2/3 bag Mixed Salad Greens
8 ounces fresh cranberries
1/2 ounce fresh soft goat cheese, crumbled
1/2 tablespoon olive oil
3 tablespoons red wine vinegar
2 tablespoons oregano
Equipment:
- Nothing weird, I promise
- Put the greens in your serving vessel.
- Add the cranberries and goat cheese.
- Sprinkle the oregano on top.
- Drizzle the olive oil and vinegar on top.
- Toss thoroughly.
- Serve.
