Fearless Toddler has some strong preferences, and right now she likes pasta. I don't know why, but she does. I guess it's okay. She doesn't ask for it every day, and she's got a very strong preference for carbs in general right now. (She takes after her father.) I'm trying to give her at least one "pasta" meal a week, and that's been okay. It's whole wheat pasta, and I try to keep it interesting for the rest of us. Recently I had some leftover whipped feta from the Plague Party and I thought, "Well, here's something I can give to Fearless Toddler and she'll love it. I'll just mix in the whipped feta with the pasta and it'll be easy and like a work of genius."
Well, she loved it all right. And my husband loved it. The only problem? I hated it. I couldn't finish a single serving.
I don't know why I should have hated it so much. I liked it just fine as a dip. As a dinner, though, this was just not even remotely to my tastes. It might be to yours though. It certainly was easy.
Pasta with Whipped Feta (serves 4; approx. $3.10/serving)
1 box pasta, prepared according to the instructions on the box
2 cups whipped feta
Equipment:
- If you're using leftovers, you won't need anything special
- Combine the cooked pasta and the leftover feta in the serving bowl and toss to combine.
- Serve.
